raritan gumbo today

making a "RARITAN gumbo" for today's game.with chicken,shrimp,clams,italian sausage,chorizo,ham and green beans instead of OKRA.hope it comes out!

Any reason why green beans as opposed to okra?

You need the starch from the okra. It's what puts the "gum" in "gumbo".

Without it, it's just stew with weird ingredients.
