Make sure you hit the Mercato Bellaro if you are in Palermo. You have to have the Stigghiola. It is intestines that they marinate overnight in 5 gallon buckets and then grilled over hot coals. They also grill octopus at the same stalls. If you like bone marrow over toast points you'll love the Stigghiola.
