OT How do you take your chili?

I like mine a little on the thicc side, a few pinto beans in it, with saltines on the side and some hot sauce. Lately I've been going half ground chuck, half pork sausage - I dig it.

The whole beans/no beans thing amazes me. People that eat and like beans regularly, will starve themselves before they will eat beans with chili, I don't get it. I will take chili however somebody makes it unless they add cinnamon (like Cincinnati chili has or sugar). Crackers first for me, or cornbread or Fritos are ok in a pinch. Hot sauce depends on how spicy I make it. If for just me and Mrs. Peeper I make it spicy and it doesn't need hot sauce, if I'm making it for a mixed crowd then I will add my own hot sauce.

I’ve done half chorizo in mine before and it came out great. I prefer mine with no beans but my wife always wants some in there so I throw in just one can of beans to keep the peace.

Some saltines and a splash of Louisiana hot sauce on top and I’m happy happy.

I knew a dude that would take canned chili, velveeta, and hot dogs and turn it into the greatest culinary delight you've ever beheld at 2am in the morning

Sounds like a drunken college meal me and roommates would do. Our favorite back then was Tunaroni & Cheese, can of Tuna with a box of Mac N Cheese, can of Rotel if we had it would made it "fancy" Tunaroni & Cheese.

It’s never a deal breaker for me. I’ll eat it either way although I had someone’s chili one time that had way too many beans in it. Think of a recipe calling for two cans and they put five in it. Just overkill.

I think people like to have a strong opinion on beans in the same way some grown men recoil in horror at clowns - it's a low-stakes way to be edgy and unique.

My personal opinion is chili w beans is a meal, and chili w no beans is a garnish on hot dogs/hamburgers - but I ain't getting mad about it either way.

I made some last weekend and used ground chicken from Aldi. While I was pre-cooking the chicken it grossed me out, kind of became this pan of mush. But, it magically came back together later looking like regular ground beef and it was really good, couldn't tell a difference from beef.

My wife makes a chili with ground turkey that tastes fantastic.

Thin, deer sausage, colorful peppers, mushrooms.

Also like less tomato-ey and more sour cream and cheese.

Must have crackers.

ETA: I'm not a huge chili fan.

Pretty much me too. I prefer beans, but either is fine. Too much beans ruins it though. Ratio of 2:1 beef to beans by weight is about right. Beans aren’t the star of the show in chili.

I appreciate the comparison between John Wayne Gacy and chili beans, but all jokes aside, clowns are 17ing creepy. I thought this was a universally understood truth.

This is the only time it’s an issue for me. Beans are supposed to be a complement to the meat, not 50% of the dish. One or two cans is fine, but there shouldn’t be more than a couple beans in each bite

I usually add a little Worcestershire when cooking ground turkey or chicken just to help with the "mind over matter" thing.

1lb ground deer
1lb chorizo
1 onion
2 cups tomatoes
3 cloves minced garlic
6 cups coffee
Chilli peppers
1 green bell pepper chopped
1 red bell pepper chopped
2 cans pinto beans
1 can black beans
Dash of cayenne
1/4 cup(ish) Texas Pete or Louisiana hot sauce
Tablespoon of masa flour to thicken( if desired)
Do your own seasonings, losers
I like William’s or Caroll Shelby seasoning

Simmer onion and peppers with lid off (to cook off acid) until onions are translucent
Add tomatoes and meat; stir and simmer for 45 min (lid off). Do not drain fat.
Add coffee (lid off) and slow simmer another hour.

Again, it’s important to this point to leave the lid off to cook off acid from the tomatoes, peppers, and coffee. Keep the flavor, eliminate the heartburn/reflux.

Add beans (as desired) and cover for another 30min
Masa to thicken

I like lots of beans. The coffee adds another dimension to the flavor. I know some add a little cocoa powder, but that’s meh for me.

Adding just a touch of cinnamon is a game changer though.

I’ve always usually added some ground pork with the chuck, but I’ve started adding some hot Italian sausage instead and we like that a lot. Don’t care one way or the other about beans but the kids like them so I add some pintos and kidneys.

To my bowl I add: a little hot sauce, grated cheddar, a small dollop of sour cream on the side, and Fritos on the side.

Prefer it with beans but I'm fine without. Usally with some hot sauce, and a slab of cornbread in the bottom of the bowl - perfect

chili with beans is an abomination, in Texas and everywhere else where logic applies. 95% serious, 5% joking. If you eat beans in chili it’s soup. I prefer venison, and a tomatillo base.

Eta: my mother puts beans in it, I have had several chats with her on this matter. She has not altered her chili recipe thus far.
