I’ve done half chorizo in mine before and it came out great. I prefer mine with no beans but my wife always wants some in there so I throw in just one can of beans to keep the peace.I like mine a little on the thicc side, a few pinto beans in it, with saltines on the side and some hot sauce. Lately I've been going half ground chuck, half pork sausage - I dig it.

It’s never a deal breaker for me. I’ll eat it either way although I had someone’s chili one time that had way too many beans in it. Think of a recipe calling for two cans and they put five in it. Just overkill.The whole beans/no beans thing amazes me. People that eat and like beans regularly, will starve themselves before they will eat beans with chili, I don't get it. I will take chili however somebody makes it unless they add cinnamon (like Cincinnati chili has or sugar). Crackers first for me, or cornbread or Fritos are ok in a pinch. Hot sauce depends on how spicy I make it. If for just me and Mrs. Peeper I make it spicy and it doesn't need hot sauce, if I'm making it for a mixed crowd then I will add my own hot sauce.

I think people like to have a strong opinion on beans in the same way some grown men recoil in horror at clowns - it's a low-stakes way to be edgy and unique.The whole beans/no beans thing amazes me. My wife makes a chili with ground turkey that tastes fantastic.I made some last weekend and used ground chicken from Aldi. While I was pre-cooking the chicken it grossed me out, kind of became this pan of mush. But, it magically came back together later looking like regular ground beef and it was really good, couldn't tell a difference from beef.

My personal opinion is chili w beans is a meal, and chili w no beans is a garnish on hot dogs/hamburgers - but I ain't getting mad about it either way.
This is pretty much how I make mine. I just use the Kinder's seasoning instead of making my own

It changes the game alright, to the point I won't eat it. Sorry, just can't do it...........Adding just a touch of cinnamon is a game changer though.
