How do your cook your sweet potato? I have googled it twice and it been terrible. Hard as a rock. Aluminum foil with and without.

Seems simple but ......
I’ve baked them both ways, but prefer foil and a very light coating of vegetable oil after washing thoroughly. It makes the skin tender enough to eat. It sounds like you may not be cooking them long enough. Unless you are overcooking them way too much.

I just want restaurant quality or close to it.

I cooked it 45 min maybe a little more at 400ish.

Working on cleaning out the freezer during this snowstorm. Got an old frozen cheap, pepperoni pizza. Adding a salad and unsweetened iced tea and some vanilla ice cream.

Lots of snow on the ground so my wife made chicken and dumplings and collard greens. Had some ambrosia along with it and a small serving of peach cobbler for dessert. Hit the spot!

Tonight we had a burger with sautéed mushrooms and grilled onions. Ranch pasta salad as the side. Pretty good.

Just went to the local meat market and got me some fresh ground hot sausage and to Cracker Barrel for some pancake mix. Going to have one of my favorite meals on a cold winter night tonight. Fresh sausage patties and pancakes with a diet Pepsi.

Last night it was BBQ, chicken tenders, baked beans, Brunswick stew, hush puppies, unsweetened tea, and a Klondike bar.

For it's super bowl it's homemade chili and cream cheese on crackers.

I’ve been in Costa Rica for a week. If I never eat beans and rice again I’ll be a happy man and I actually like beans and rice.
I know what you mean. You notice I eat a lot of the same things every week? That's how I control my diabetes. I get tired of the same veggies every night but you do what you have to do.

Our local Harris Teeter has prime rib, new potatoes and steamed veggies on Thursday nights. The prime rib is both good and huge. That's what I'll be having with enough left over to cut up and put on a salad tomorrow night.
