There's not really a "fine dining" place in Jackson (as I equate it with service + food). There is some seriously good food at a lot of places, though. Walkers being my favorite.
I still like to mention Amerigo. Little lighter on the wallet than Walkers, still a good atmosphere, and a wine list that won't melt your credit card.
FYI... Fine Dining means a fancy menu..

I've only been doing the "fine dining" thing about a year, and I agree about the service being as important as the food. Capitol Grille (Nashville) and Phillip M's are excellent examples.

I will never know how good Mint is because I refuse to go there due to their outrageously stupid 17n commercial. "beep eggs beep eggs and...beep eggs and something or another" absolutely stupid. Maybe the TSUN morons get that commercial, but I sure as hell don't.

You can't go wrong with Walker's Drive-In. I have been several times for lunch and dinner. My all time favorite will always be The Mayflower downtown though. If you are over in the Flowood area John Cerami's place is great if you like Italian. The atmosphere is awesome.
We love Cerami's and the atmosphere cracks me up, but I like it. The "salad wagon" that was his old hotdog stand...awesome.

Fantastic chinese food, but c'mon. And it's Anjou, not Roux.
Roux is Tom Ramsey's restaurant concept, expected to open downtown later this year.
